My husband and I have an obsession. Our obsession is with Backyard Bowls, a restaurant with hippie flair serving up healthy bowls of grains, fresh fruit, and blended açaí. If you live in Santa Barbara or find yourself passing through, run, don’t walk to Backyard Bowls. Though we’ve had just about everything on the menu (and it’s all amazing) we keep going back to the hot quinoa bowl. Their quinoa has this nutty taste and is covered with fresh fruit, walnuts, and a splash of cashew milk and drizzled with a bit of agave nectar. Sooooo gooooood. The following recipe is in honor of Backyard Bowls.
Hot Quinoa Breakfast (serves 4)
- 1 cup quinoa
- 2 cups water
- 1 t ground cinnamon
- 1/2 cup raisins
- 1/2 cup berries
- 1/2 cup strawberries
- 1/4 cups walnuts
- Cashew Milk**
- Agave Nectar or honey
Rinse the quinoa under water then strain. Place rinsed quinoa into a pot and add to it 2 cups of water. Bring to a boil over medium heat, stirring occasionally.
After 10 minutes of boiling add raisins and cinnamon. Continue to boil until all the water has been absorbed, about 5 more minutes.
Spoon hot quinoa into bowls and top with fresh fruit, walnuts, cashew milk, and agave or honey.
Healthy, filling, and delicious. Enjoy!
**Cashew milk is a tasty dairy-free alternative. It has two ingredients. Total. Easiest recipe ever? I think so.
- 1/4 cup raw, unsalted cashews
- 1 cup water
Soak cashews in a bowl of water for at least an hour. Drain cashews and place in a blender. Add 1 cup of water and blend until completely smooth. Save extra in the refrigerator.
